The very first custom order I made is a collaboration between Nakagawa_Kajiya and Tadokoro_hamono. I've chosen to go with stainless steel, the Ginsan steel, also known as Silver #3, a steel that has a sharp and keen edge while having a less hussle of taking care of it away from rust, suitable for any type of environment. There are very few knifemakers in Sakai that produce stainless steel knives, but Nakagawa-san will never disappoint. Nakagawa san was famous for forging Ginsan and VG-10 steel and supplies to quite a number of premium brands in the cutlery industry. Based in Tosa, Kochi prefecture,the sharpener, Makoto Tadokoro-san, was also trained in one of the most famous sharpening workshops in Sakai, Morihiro Hamono. Tadokoro san is now in his 40s and he has more than 20 years of sharpening experience.

The length of the blade is unique in this custom order. As some of us know, the Sakai length of kitchen knives are usually measured from the machi(the small gap near the neck) to the tip, which often makes the blade shorter. As an example, a 210mm gyuto, the actual edge length might be around 195-200mm, and it often comes with a blade height of 45-47mm, which makes  the blade shorter and narrower on the blade height.

For my customized order, I requested a special length and blade height from Tadokoro san. The 225mm machi to tip length gives the edge length a proper 210mm, which is the most comfortable length in my opinion. And with the extra height, 50mm on the heel, this will prolong the lifespan of the blade, and provide a great knuckle clearance at the same time.
